How often do you eat vegetables as opposed to fruit for breakfast?
Of course while I appreciate fruit is always an option, it’s good to get into the habit of eating savoury breakfasts in equal, if not greater amounts so you keep your fructose tastebuds in check. Whilst spinach, mushrooms and tomatoes are the traditional vegetables we associate for breakfast, I’d thought I’d blog out some more creative options for you to ponder upon…
Really love this because it’s light in flavour and watery (I don’t know why that matters!). Sometimes I just like to fry it in a little butter and have it as a side. You can also make mini courgette pancakes and grate it into anything egg related.
I never used to eat much avocado and now it’s a solid contender in my shopping basket. There is nothing like a fresh creamy ripe sliced avocado with some tomato and scrambled egg. Alternatively, mash it onto toast with cottage cheese, or whip it into a green smoothie.
Yes I said peas. A really handy keep for your freezer. Taste divinely sweet and can be cooked in a mug come breakfast with a knob of butter. Try adding an egg, some spinach and a little cheese for a quick, all in one cup breakfast.
A light delicate flavour that goes really well with egg and ham. You can wrap some palma ham around and top with a poached egg for something that will look a bit posh and likely impress.
When pumpkins are out, I use squash puree as a base for my homemade granola.
Now I’m not quite up to onions yet, but shallots have a lighter delicate flavour that is manageable early on. Try in a breakfast casserole.
Grate into an omelette, breakfast casseroles or just roast a big batch and add a few chunks as a side.
It’s actually quite fun experimenting with different things and mixing up breakfast a bit more so I urge you to have a go with vegetables. Whip up some peas for someone you love and see what they think. Happy for you to completely blame me if they think you’re strange
